Winemaker Antonio Jiménez Sánchez comes from a family of farmers with no tradition of growing grapes or making wine. A passion for cultivating and caring for the land led him to study Agricultural Technical Engineering at university. However, he always loved learning about and drinking wine. So after finishing his degree, he worked at a research centre dedicated to the characterisation and identification of grape varieties. At the same time, he started a Master’s Degree in Oenology and also helped a friend in his winery.
In 2006, Antonio and his partner bought a 2.5-hectare vineyard of dry-farmed, bush-vine Monastrell. They began to cultivate the grapes sustainably with the least possible environmental impact, using traditional rainfed agriculture, organic and biodynamic methods. In 2018, they created Bodegas de Fábula and, more recently, Antonio has started a new project, called ‘Antonio de Fábula Vinicultor’, making only natural, minimal intervention wines. However, before his own wines are ready, he will continue selling those from Bodegas de Fábula. None of the wines contain added sulphites.
